How to Cook Roasted Chicken (Organic)



Please try this yummy roasted chicken. Eating low glycemic can be challenging but it doesn't have to be boring! There are so many different spices and things you can do with a whole chicken. Stuffing it with fresh lemon, fresh herbs, doing a good brine and the side dishes are endless. Please like the video and share with your friends. Enjoy!

1 whole organic chicken (around 4 lbs)
1 tbsp organic butter
1 tbsp organic coconut oil
Spice rub 1 tsp herbs de Provence, lemon pepper, sea salt, black pepper
5 cloves sliced garlic
2-3 Sprigs of rosemary
1 onion cut into wedges

Preheat oven to 450 degrees. Rinse and dry chicken. Mix butter, coconut oil, garlic and half of the spice rub in a small bowl. Separate the skin from the chicken breast and with your hands rub the mixture under the chicken skin and all around the chicken. Sprinkle the rest of the spice mix over the chicken. Stuff the chicken with 1/2 of the onion and the fresh rosemary. Tie the legs together with some twine and tuck the wings under the breasts. Lay the rest of the onion in the roasting dish and place the chicken on top of the onion. Roast in the oven for 20 min. per pound. Make sure the chicken has an internal temp. of at least 160 degrees to 170 degrees. Baste the chicken every 20 min. or so. Take chicken out and let rest under foil for at least 15 min. Slice and enjoy!!
